Spinach Orange Salad

Spinach is one of those wonderful foods, that we can’t eat too much of.  It cleanses the blood of toxins, that can cause skin disease. It also builds blood, due to the high amounts of iron and chlorophyll, and has the ability to relieve herpes, due to the sulphur content.

Spinach is loaded with Vitamin K (great for bone health), Vitamin A (beneficial for night blindness), Manganese, Folate, Magnesium and Vitamin C. It’s loaded with beta-carotene (not the same as Vitamin A), lutein (may help in prevention of cancer), and not to forget fiber. Along with green leafy vegetables, spinach is one of those foods, that are eaten in high amounts, by people who don’t get cancer. Spinach is also a wonderful treatment for diabetic thirst and other types of dehydration. Spinach is a food I highly recommend for teenagers with skin problems, pregnant women and children, who needs powerful nutrients for growth and happiness.

Spinach is available all year, so it’s one of those leafy greens, you want to eat plenty of. It’s great for salads, juicing, and many other vegan dishes.

 


INGREDIENTS

DRESSING II

  • 1/2 cup pomegranate juice
  • juice from 1 organic orange
  • 2 tblsp raw honey or agave nectar
  • 1/4 cup organic extra virgin olive oil
  • Celtic sea salt & pepper to taste

 


 

TO MAKE

Rinse and prepare the spinach and the other ingredients. Add the spinach and mix in the dressing. Decorate the salad with orange slices, avocado, pomegranates. Sprinkle with the goji berries and sliced almonds


 

TO SERVE

Serve as a main course or a side dish or blend it up for a raw soup.
